Fines herbes (feen ZERB) translates from the French to, as you may have guessed, fine herbs. Its origins are found in classic French cuisine and often attributed to “the king of chefs and the chef of kings” Escoffier. Fine herbes is a blend of equal parts chervil, tarragon, chives and parsley. Thyme is the next most typical inclusion and occasionally marjoram, savory and watercress. Three of the four, chervil, tarragon and chives, are spring herbs that are flourishing in the garden now, parsley won’t be planted until June. By then the warm days of summer will send the chervil to seed, the chives will be past their blossom but will still be fine to use and the tarragon will start to flower. There are dried versions of fines herbes sold by every major herb supplier, but dried chervil and parsley lose much of their flavor in comparison to when they are fresh.
Chervil is a shade loving annual with feathery leaves and lacy white flowers, like a pale dainty parsley. It doesn’t last long once it is cut. I have never seen it a market, farmers or otherwise so growing it is your best option. The good news is even though it is an annual, it easily self seeds. Our crop of chervil migrated on its own from the garden to a shady spot in the back of the house and shows up every spring.
Chives love the sun and are one of the first herbs to pop up in the garden. The beautiful lavender blossoms are a welcome addition of color to the early spring garden. Chinese chives, also called garlic chives, bloom in the fall with white flowers. Garlic chives self seed very easily and if you don’t want them to take over your garden, don’t let them go to seed. For fines herbes I would recommend regular chives, their delicate onion flavor harmonizes well with the other herbs.
Parsley has a warm gentle flavor, green and piny, with just a touch of camphor. Parsley mellows the assertiveness of its partners in flavor while adding its own intensity. Our parsley plants are still in flats, waiting another month or so for the warmer days of summer. We grow both curly and flat leaved or Italian parsley. I prefer flat leaved parsley for this mix.
Tarragon has a robust anisey camphor flavor, the counterpoint to the milder parsley licorice flavor of chervil. Tarragon is an herb that usually stands alone with the exception of this blend. The chervil, parsley and chives are not assertive enough to challenge the tarragon.
Fines herbes are always used as a finishing element to a dish, sprinkled in an omelet or scrambled eggs, in a simple vinaigrette, over some freshly steamed mussels, topping a bagel with cream cheese and smoked salmon. Make fine herbes in small quantities since it is best fresh.
Fines Herbes
Makes about a quarter cup
Ingredients
1 T finely chopped tarragon
1 T finely chopped chervil
1 T finely chopped chives
1 T finely chopped flat leaved parsley
Directions
With a sharp chef’s knife, chop each of the herbs separately.
Measure out a tablespoon of each and combine in a small bowl.
Add fines herbes at the end of the cooking process to preserve the flavor of the herbs.
In this unique lasagna, perfect for the fall and winter months, a ricotta enriched butternut squash purée takes the place of a marinara sauce. A cheesy spinach filling complements the creamy squash for this satisfying and healthy vegetarian main dish.
You will need a medium size butternut squash, weighing two and a half to three pounds. Cut the stem end off the butternut squash then cut the squash in half where the bulb end meets the neck. Cut both pieces in half lengthwise. scoop the seeds and fiber out of the bulb end, save seeds for later use. I rinse the seeds off and dry them between layers of paper towels. Toss with a little bit of olive oil and sprinkle with salt. Bake in a 375°F oven until they pop and become toasty brown. They are great for topping salads and for snacking.
Cover a large baking tray with parchment paper. Brush the squash pieces lightly with olive oil and place the four sections of squash cut side down on the baking sheet. Bake in a 375° oven for about 50 to 55 minutes, until the squash pierces easily with the tip of the knife. Let cool for 10 minutes, the skin should come off easily. Place the squash pieces in the bowl of a food processor fitted with the metal blade. If necessary, add a little additional liquid, purée until smooth, you will have about 2½ cups. Add 1 cup of ricotta cheese and purée again, season to taste with salt and pepper and a little freshly grated nutmeg.
Place the spinach in a large bowl. Lightly rinse the spinach and toss in the bowl. The moisture will help wilt the spinach quickly. I used a 1 pound container of organic triple washed spinach. Finely chop two garlic cloves. Heat a large sauté pan over high heat and add the olive oil and swirl it around. Saute the garlic for a few minutes then add the spinach by the handfuls, adding more each time as it wilts down. After squeezing out any additional liquid, the end result will be one generous cup of spinach.
You can make this version with regular lasagna noodles or if you are following a gluten-free diet, I would recommend brown rice pasta noodles from Tinkyada, easily found in large grocery stores. They are actually good and have a nutty brown rice flavor. Follow package instructions with regular noodles, I would suggest cooking brown rice noodles for about 10 minutes, no longer. Drain them in a colander, rinse with cold water and dry on parchment lined baking sheets. I haven’t tried this recipe with no bake noodles, my suggestion would be just be certain that the ingredients in your lasagna are moist enough to cook the noodles properly. There are 14 noodles in the package of brown rice noodles, I cook them all in case of breakage. You can always make a lasagna roll up with any leftover purée and cheese.
In a medium bowl mix the well-drained garlic spinach with one and a quarter cups of ricotta cheese and a cup of mozzarella cheese or a cheese blend that you prefer. Season to taste with salt and freshly ground pepper.
To assemble the lasagna, spray the bottom of your baking tray with nonstick spray.I used a disposable pan with dimensions of 11 x 8 x 2 . Spread one-third of the butternut squash mixture over the bottom of the tray. Top with three lasagna noodles. Dollop one half of the spinach cheese mixture over the noodles. Continue to layer and finish with the remaining butternut squash, sprinkle with a generous amount of cheese, and a sprinkle of dried basil and oregano. Cover with aluminum foil and bake for a half hour. After the half hour take off the foil reattach any cheese that has attached to the foil and bake uncovered for another 10 to 15 minutes.
Since lasagna is a time-consuming dish you could do this in stages, make the butternut squash puree one day, the spinach filling the next and assemble and cook on the third day. You could substitute frozen spinach rather than cooking down your own. Possible additions to the dish include sautéed onions, sage leaves, even toasted walnuts. Serve with a crisp salad of arugula, fennel and apples. As it is with all lasagna, it’s even better the next day.
Butternut Squash and Spinach Lasagna
Serves 6-8
Ingredients for butternut squash filling
1-3 lb butternut squash
Olive oil
1¼ c regular or low-fat ricotta cheese
½ t salt
¼ t freshly ground nutmeg
Ingredients for spinach layer
1 lb fresh spinach
1 t olive oil
2 t minced garlic
1 c regular or low-fat ricotta cheese
1¼ c mozzarella cheese
Kosher salt and freshly ground pepper to taste
To assemble the lasagna
1 lb lasagna noodles (regular or gluten-free)
Shredded mozzarella cheese
Shredded Parmesan cheese
Dried basil and oregano
Directions for making the squash puree
Preheat oven to 375°F.
Line a large baking sheet with parchment paper and spray lightly with nonstick spray.
With a sharp knife cut the squash in half where the neck meets the bulbous end. Cut both of these pieces in half lengthwise. Scoop out the seeds and reserve for toasting if desired.
Brush the cut sides lightly with olive oil and place the four squash pieces on a baking sheet cut side down. Bake in preheated oven 25 minutes, rotate and bake another 25 minutes. The squash should be easily pierced with the tip of a knife.
Cool the squash for about ten minutes, until it can be handled. Scoop out the flesh and place in the bowl of a food processor fitted with the metal blade. Puree squash until smooth. Add the ricotta cheese, nutmeg and salt and puree again. Taste and adjust seasonings. Add a little more ricotta if necessary, the puree should have the consistency of a thick marinara sauce. Set puree aside for the assembly. Leave oven on at 375° if you will be finishing the lasagna.
Directions for the spinach filling
Place the fresh spinach in a large colander that is set inside a large bowl. Sprinkle the spinach lightly with water and toss spinach lightly.
Heat olive oil in a 12″ saute pan. Add garlic and saute until light golden brown. Add the spinach by the handful, adding more as it wilts down. After draining the spinach of excess liquid, you will have a generous cup.
In a medium bowl combine spinach and garlic along with ricotta, mozzarella, salt and freshly ground pepper. Taste and adjust seasonings.
Directions for assembling the lasagna
Bring a large pot of lightly salted water to a boil over high heat. Add lasagna noodles and cook according to package directions. Stir noodles occasionally to prevent them from sticking. Drain well and rinse with cool water.
To assemble the lasagna, spray the bottom of the baking dish with nonstick spray. I used a disposable tray with dimensions of 8″ x 11″ x 2″.
Spread one-third of the butternut squash puree over the bottom of the pan. Sprinkle lightly with mozzarella cheese. Top with three lasagna noodles. Dollop one half of the spinach cheese mixture over the noodles, sprinkle lightly with mozzarella cheese. Top this layer with the second layer of noodles.
Spread your second layer of butternut squash over the noodles. Sprinkle with mozzarella cheese, then top with the third layer of lasagna noodles.
Top this with the remaining spinach cheese mixture and sprinkle with mozzarella cheese.
Top with the remaining butternut squash puree and spread evenly over the noodles. Sprinkle this layer generously with shredded mozzarella and Parmesan cheese. Sprinkle lightly with dried basil and oregano.
Cover the baking dish tightly with foil and bake for 30 minutes. After 30 minutes remove the foil, reattach any cheese clinging to the foil and continue to bake uncover for another 10 to 15 minutes. You can turn the broiler on for a few minutes if you want to brown the cheese.
An often requested hors d’oeuvre from my catering days were butternut squash quesadillas with chipotle lime dipping sauce. They were a lighter alternative to classics like miniature beef wellingtons or scallops wrapped in bacon. A recipe I originally found in Gourmet magazine and now on the Epicurious website, it seemed to be universally liked by everyone. Crunchy on the outside, sweet roasted butternut squash and melted cheese inside, they disappeared as quickly as wait staff could get them out to hungry guests. The flavors of the roasted squash, onion and garlic are a perfect combination with creamy jack cheese, and sweet red pepper.
Begin the recipe by roasting squash cubes, an unpeeled onion cut in segments and several cloves of garlic. Since we had a large butternut squash crop this year, I am getting faster at peeling and chopping my own squash. But if you don’t want to take the time, you can purchase butternut squash that has already been peeled and cubed. It is considerably more expensive for the convenience. For the best results, roast cubes rather than baking squash halves . Although the roasted squash will be puréed before it is spread on the quesadilla, roasting cubed squash and the onion, allows the natural sugars in the vegetables to caramelize and enhances the flavor.
On a rimmed baking sheet, drizzle the squash cubes, onion and garlic with a neutral oil (vegetable, safflower) and toss lightly. Spread them out as evenly as possible so the squash will roast, not steam. Halfway through the cooking time use a plastic spatula to toss the cubes around a bit to maximize the surface area that gets browned. The garlic will be done first, use tongs to remove it to a work surface. Continue to roast the squash and onion until tender, as much as 15 more minutes, I like to check about every five minutes or so at this point. The squash will be soft and browned in places. Remove the peel from the onion and the garlic.
While the squash is cooking you will have time to chop the red pepper. Cut it into small dice, it will make for neater pieces when you cut the quesadillas. Place chopped pepper and jack cheese into separate bowls at your work station.
In a food processor or blender, purée the squash, onion and garlic until not quite smooth, leave it just a little chunky and transfer to a bowl. On a work surface spread out four tortillas. Next to the tortillas, place your bowls of squash puree, pepper and onion. Since you will be using one-fourth of each item on the tortillas, it’s relatively easy to “guesstimate” how much to use. Spread the puree first, evenly, almost but not quite to the edges, then sprinkle on the red pepper and then the cheese. Top with a second tortilla and press lightly to adhere. Spread a light coating of softened, not melted butter on either side of each tortilla. This step is little messy, you can put a sheet of waxed paper on two large baking sheet to cut down on the butter getting all over your work surface.
Heat a 7 inch non stick skillet over medium high heat until hot and cook the quesadillas. While the first side is cooking, press down lightly on the quesadilla so that everything sticks together, it will make the flipping easier. Cook the quesadillas about 3 minutes per side, you can lift up a little to see if you have achieved the light toasty brown color. I use a plastic spatula to flip them over, with a little help from my hand. Repeat with the remaining quesadillas and regulate the heat as necessary. Transfer to a warm oven while you are cooking the remaining quesadillas. Cut the quesadillas into 6 to 8 wedges, I have found a pizza wheel makes the neatest cuts.
Serve quesadillas with chipotle lime dipping sauce. Years ago when I first made this recipe it was difficult to obtain chipotles, now they are available at any supermarket. Chipotle peppers are smoked and dried jalapenos that are marinated in a tangy sweet red sauce. A little chipotle goes a long way. It is better to add a little at first to see how it tastes. The sour cream will mellow the chili out and the lime adds a nice contrast.
The dip can be made ahead, and even though the recipe doesn’t say so, the quesadillas can be made ahead. Reheat the quesadillas in a warm oven for about 10 minutes or until they feel hot. The important thing to remember whether fresh or reheated is to let the quesadilla rest for a few minutes before cutting. Too hot and the filling oozes out and is a mess to eat.
I have always used the recommended flour tortillas, I’m sure other varieties would work too. If you like your food spicy, pepper jack cheese could be substituted or any other good melting cheese. They would make a good vegetarian entree or a light lunch along with a green salad.
Butternut Squash Quesadillas
Makes 24 to 32 pieces
Ingredients
5 c butternut squash, peeled and cut into ¾ inch pieces
1 medium onion, unpeeled and cut into eights
1 large garlic clove, unpeeled
1 T vegetable oil
8- 5 to 6-inch flour tortillas
1 c chopped red pepper
1 c coarsely grated jack cheese
½ stick unsalted softened butter
Directions
Preheat oven to 400°F.
Arrange squash cubes, onion and garlic in a single layer on a shallow baking sheet. Drizzle with oil and toss lightly to coat.
Roast vegetables in the oven for about 15 minutes, until the garlic is softened. Transfer garlic to cutting board.
Roast squash and onion for an additional 15 minutes or until tender. Discard peels from the onion and garlic.
Purée the squash, onion and garlic in a food processor. Season to taste with salt and pepper.
On a work surface, spread out four tortillas. Spread one-fourth of the squash purée on each of the four tortilla. Sprinkle each tortilla with one fourth each of the red pepper and the cheese. Top each quesadilla with a plain tortilla, pressing gently together. Spread each side of the quesadillas with a thin layer of softened butter.
Heat a medium non stick skillet over medium high heat until hot and cook quesadillas, 1 at a time until golden, about 3 minutes on each side, transferring to a cutting board.
Cut each quesadilla into 6 to 8 wedges and serve with chipotle lime dip.
Chipotle Lime Dip
Makes one cup

1 canned chili in adobo, minced
2 t fresh lime juice
1 c sour cream
Directions
In a small bowl stir the chili and lime juice into the sour cream until well combined. Can be made ahead, cover and chill.
Joe begins planning the vegetable garden right after the Christmas holidays. As always, he asked me if there was anything I wanted to add this year. I knew right away I wanted him to grow butternut squash. They were never planted before because the vines need considerable room to grow. Since the ever-expanding garden now includes an area near the orchard and the berry bushes, there would be some more room available. Last year he grew some loofah and bird house gourds in that area but since they were not going to be repeated, butternut squash got the okay.
Butternut is a variety of winter squash. The name is a bit of a misnomer however, since all winter squashes are frost tender (the plants will die with the first frost) warm season (seeds must be planted when the soil temperature is above 65°) annuals (plants that complete their life cycle in one growing season). With a growing season of 110-120 days for full maturation, they are harvested in the fall and can be kept well through the cold winter months, hence the name. Summer squash like zucchini and yellow crookneck are harvested all summer long while the fruit is still immature and the skin is still tender. Not counting the ones that “get away” and could fill in for baseball bats. And yes, botanically speaking, both winter and summer squash are fruit since they develop from a flower and are the part of the plant that contains the seeds. Winter squash should only be harvested when fully mature. When winter squash is mature, the stem end will turn from green to brown and will appear that the stem is beginning to dry out. The skin should look dull, not shiny and it should be difficult to dent the squash skin with your fingernail. Winter squash do not require refrigeration but should be stored in a cool dark area.
Last weekend the harvest was finally ready and Joe brought them in by the wheelbarrows full, 60 in all. Some of the squash were slightly damaged and they will be the ones I use first. Some I will give away to friends and the rest we are storing on shelves in our basement.
Low in fat and rich in vitamins A, C, fiber and antioxidants, butternut squash is a great addition to many recipes. I like to roast cubes of butternut squash to add to my fall salads.The butternut squash seeds can be tossed with olive oil and salt and roasted for a crunchy snack or a salad topper.
Because of fall’s chilly temperatures, I wanted to make a more substantial main course soup. I liked the idea of roasting the vegetables on the baking sheet to bring out their natural sweetness. For easy clean up, I lined the baking sheet with parchment paper. The leek, pepper and squash should be cut into pieces all relatively the same size so they cook evenly. A medium dice works best here, about 1 to 1 ½ inches. Toss the vegetables with olive oil and spread out evenly on a baking sheet, don’t overcrowd. Arrange the chicken thighs on top of the vegetables and season everything with salt and pepper. I think chicken thighs are the best choice for this recipe, the skin keeps the meat moist during the roasting process. Rotate the pan halfway during the cooking process to ensure even cooking.
Transfer the chicken thighs to a plate to cool and add the roasted vegetables to a pot along with the chicken broth and spices. Simmer over medium heat and use a potato masher or the back of a wooden spoon to mash-up some of the vegetables to give the soup a thick, chunky texture. Shred the chicken into bite sized pieces, discarding the skin and bones. Add to the soup and stir in fresh lemon juice, salt and pepper to taste. When the soup is almost done stir in the kale ribbons and cook until they are wilted, an additional five minutes. Additional add ins for this soup could include cannellini beans and fire roasted diced tomatoes. The soup can be frozen or stored in the fridge for several days.
Roasted Chicken and Butternut Squash Soup
Serves four to six
Ingredients
6 bone-in skin-on chicken thighs
1 medium butternut squash, (2½ to 3 lbs) peeled, seeded and diced medium
1 medium leek, sliced medium
1 small red pepper, diced medium (I added a red poblano too for a little kick)
2 T extra virgin olive oil
Kosher salt and freshly ground pepper
4 c low sodium chicken broth
¼ t ground cumin
¼ t ground coriander
¼ t smoked paprika
2-3 cups of thinly chopped kale (avoid thick stems)
2 T fresh lemon juice
Fresh parsley or coriander (optional)
Directions
Preheat oven to 425°F. In a large bowl toss the squash, red pepper and onion with the olive oil. Spread evenly on a large baking sheet. Arrange the chicken thighs on top, spacing out evenly. Season everything with salt and pepper.
Roast until the squash and chicken are cooked through, rotating pan halfway through the cooking process.
Transfer the chicken to a plate, loosely cover and let cool. Transfer squash and onions to a medium pot and broth, cumin, coriander and smoked paprika. Simmer over medium high heat.
With a potato masher or the back of a wooden spoon, mash some of the vegetables until soup is thick and chunky.
Discard the skin and bones from the chicken, cut meat into small pieces and add to the soup. Stir in lemon juice and season with salt and pepper.
Stir in the thinly chopped kale and cook for five minutes more, until the kale is wilted. Taste and adjust seasonings, To serve, top with fresh parsley or cilantro.
The challenge facing us in late summer/early fall is preserving the harvest. A prime example is hot peppers. In tropical climates they thrive as perennials and can grow for many years. It would be great if I could just walk down to the garden in January to pick a few fresh jalapenos. But given the fact that January temperatures where we live are below freezing and pepper plants prefer a daytime temperature of 65-80°F, it won’t be happening anytime soon . So it is necessary to find methods of preservation now to enjoy them later while the peppers are at their peak. Every year I freeze whole peppers, dry them, make chili flakes, pickle jalapenos, I’m even making sriracha now, but a new method is always welcome.
A very simple recipe I found for eggplant, another garden stalwart, suggested topping grilled slices with prepared harissa and yogurt. In the past I purchased harissa in a jar or a tube at the middle eastern stand at the local farmers market. This time I decided to see if this was something I could make myself. Harissa, is a garlicky spicy condiment found in the Northwest African countries of Algeria, Morocco and Tunisia. It can be used as a condiment for meat or fish, roasted vegetables, stirred into soups and stews and served alongside couscous. Think sriracha with more complexity. It’s ingredients can include roasted peppers, garlic, chile peppers of all varieties, fragrant spices such as coriander, cumin and caraway, dried mint, lemon and olive oil. There is no one master recipe for harissa. The ingredients in harissa vary by country, ethnicity, even neighborhood. You can adjust the heat by the number and type of chilies you use, just remember, harissa is supposed to be hot.
My recipe is a little different from most since I used fresh hot peppers, not dried ones that need to be reconstituted. This meant using double the amount of peppers. I used one red bell pepper, four mild poblano peppers and a mix of jalapeno, cayenne and ancho. I added a little tomato paste for sweetness, preserved lemon peel with just a little juice, chopped garlic, smoked paprika and an aromatic spice blend. I think the spice blend is what really gives this dish its unique flavor. Whole spices, coriander, cumin and caraway are toasted in a small skillet until the fragrance fills your kitchen. I find it easiest to grind them in a mortar and pestle, a mini food processor doesn’t quite give the consistency you are looking for.
All the peppers need to be charred to remove the skin. I did this in a hot oven, turning occasionally to blacken all the sides. I put the charred peppers in a bowl and covered it tightly with plastic wrap to steam the peppers. It is important for to wear rubber gloves when removing the skin, seeds and stem from the hot peppers. Conventional wisdom for years has said that the hottest part of the pepper is the seeds. A recent study however has shown that even though the seeds pack some heat, it’s actually the placenta, the white tissue that holds the seeds that is the source of the most heat. As you peel the peppers put them into piles, no heat, some heat and hottest. That way you can hold back on some of the hottest peppers until you are certain the sauce will be palatable for you.
Combine the chilies, toasted spices, garlic, salt and other optional ingredients in a food processor. With the food processor running, slowly drizzle in the olive oil until you have a smooth, thick paste. Scrape down the sides occasionally. Taste, now is the time to add that extra pepper if desired. As I said before, harissa is supposed to be hot. Season to taste with salt and pepper. Transfer harissa to clean jars, top with a thin layer of olive oil and store in the refrigerator for several weeks. Since I freeze pesto I may try to see if harissa can be frozen too.
As a postscript, the harissa received immediate approval from Joe who topped cucumber slices with harissa as an after work snack.
Harissa
Makes 2 cups
Ingredients
1 medium bell pepper
8 to 10 ounces fresh chili peppers of varying heat, poblano, ancho, jalapeno, cayenne
2 t cumin seed
2 t coriander seed
2 t caraway seed
3 to 4 cloves of peeled garlic
1 T tomato paste
1 t preserved lemon peel
1 t juice from preserved lemon
1 t smoked paprika
Kosher salt and fresh ground black pepper to taste
3-4 T extra virgin olive oil
Directions
Preheat oven to 425°F.Line a baking sheet with foil. Place all the peppers on the baking sheet and roast for 10 minutes.
Turn the smaller peppers over and roast for another 10 minutes, until the skins are blackened. Remove them to a bowl. Turn the bell and poblano peppers over and roast for another 10-15 minutes, until the skins are blackened.
Remove all the peppers to the bowl and tightly cover with plastic wrap to steam the skin.
Place the cumin, coriander and caraway seed into a dry skillet over medium heat. Toast until seeds have darkened a bit and have become fragrant.
Pour toasted seeds into the bowl of a mortar and pestle. Crush seeds to a powder.
Using rubber gloves to protect your hands, stem, skin and seed the peppers.
Place the peppers (hold back a few hot ones if you are concerned), toasted seeds, garlic, tomato paste, preserved lemon peel and juice, smoked paprika into the bowl of a food processor. Pulse to combine the ingredients, scraping down the sides.
With the food processor running, add the olive oil in a steady stream until you have a smooth, thick paste. Taste, add salt and pepper to your liking and pulse in the extra peppers if desired.
Transfer harissa to clean jars and top with a thin layer of olive oil. Store in the refrigerator for several months.
I love recipes that use the bounty of the garden in a single dish and ratatouille accomplishes that in a very delicious way. In case you didn’t know, ratatouille (rat-uh–too-ee), is a summer vegetable stew that had it’s origins in the Provencal city of Nice in southern France. Traditionally, each ingredient, eggplant, zucchini, peppers, onion, garlic and tomatoes, is cooked separately on the stove top and tossed together at the very end. So it’s really a sauté that is presented as a stew.
In this version the vegetables are tossed in olive oil and roasted in the oven, eliminating the time cooking over a hot stove. Our red and yellow bell pepper harvest is the earliest I can remember. They must like the hot temperatures and abundant rainfall this year. The orange Valencia peppers are not far behind. I prefer using Chinese or Japanese eggplants for their thin skin and milder flavor. I substituted shallots for onions since our harvest was so plentiful this year. The garlic was also from the garden, a first for us.
Cut the vegetables in similar size so they will get done at the same time. The smaller the cut, the less time it will take to cook. Lightly toss the vegetables with about a half cup of a good quality olive oil. Spread them out evenly over two large baking sheets. Rotate the baking sheets top to bottom and front to back half way through the cooking time. Roasting allows the vegetables to retain their shape and they take on a delicious toasted flavor. Move the cooked vegetables to a large serving bowl and tossed with a basil chiffonade. Chiffonade, translates “made of rags” from the French (of course!). It is a technique for cutting herbs and vegetables into long thin strips, in this case, basil.
Ratatouille can be used in many ways, a side dish, a topping for bruschetta, chicken or fish. We used it as the topping for an impromptu flatbread pizza. It can be served hot or cold and is even better the next day, if it lasts that long.
Oven Roasted Ratatouille
Serves four (or two very generously)
Ingredients
2 small onions (about 5 oz. each), cut into ¼-inch-thick half-moons
2 bell peppers, red, yellow or orange, cored, seeded and cut into ¼-inch lengthwise strips
Japanese eggplant, about 1 lb, cut crosswise ½ inch thick rounds, then sliced in quarters
1 lb small to medium zucchini, trimmed and cut into ½ inch thick rounds
10 whole cloves garlic, peeled
½ c extra virgin olive oil, and more as needed
1 t chopped fresh rosemary
Kosher salt and freshly ground pepper
1½ lbs medium tomatoes (about 4), cored, and cut into 1/2-inch chunks
¼ c basil cut into a chiffonade
Directions
Place racks in the top and bottom thirds of the oven. Heat to 400°F. If using convection heat, 375°F.
In a large bowl, toss the onions, peppers, eggplant, zucchini, tomatoes, garlic, olive oil, rosemary, and 1-1/2 tsp. kosher salt and a grind of pepper. Spread the vegetables evenly over two large 12 x 16 sheet pans. Don’t spread the vegetables too thin or they may burn (they shrink a lot as they cook).
Roast, stirring the vegetables a few times and swapping the positions of the pans once, until the vegetables are slightly collapsed or shriveled, starting to brown, and very tender, about 35 minutes for my oven. It could take 10 minutes longer if you are not using convection heat.
Scrape all the vegetables and any juices into a serving bowl. Toss with the basil, taste for seasoning, and serve.
Seaweed has been a regular part of the Japanese diet for centuries. It is low in calories, fat and cholesterol, a good source of dietary fiber, vitamins and minerals. So why don’t I think of making seaweed salad more often?
Granted it’s not the most attractive item you will find at your local health food store or Asian market and the word weed makes it sound like something you might toss in the mulch heap. But sea vegetables, as they are also known, make an interesting addition to salads. I have several types in my pantry, nori for rolls, kombu for dashi, the base for miso soup. I chose wakame (wah-ka-may) for this salad. It has a chewy texture and a very mild flavor, a little sweet and a little salty. Not much is needed, an ounce of dried seaweed is enough for a salad to serve four. Dried wakame may not look like much but after soaking, it expands up to six to eight times it’s original size.
The wakame should not soak any longer than the directions suggest, it will get soggy. Drain well and rinse with cold water. Remove the inedible stem if present. Thinly slice an equal amount of Persian or seedless cucumbers with a mandolin. The simple dressing uses staples from the Japanese pantry, miso, rice vinegar, and mirin. Combine the wakame, scallions and cucumbers in a medium bowl and toss with the dressing. Top with toasted sesame seeds.
We nibbled on this light, refreshing salad while enjoying the sushi and sashimi dinner Joe prepared last weekend. In Japanese cuisine it is considered a sunomono (vinegar based cold dish). The crunchy cucumber, (fresh from the garden of course) contrasts nicely to the soft chewy texture of the wakame.
Wakame and Cucumber Salad
Serves four
Ingredients
1 ounce dried wakame seaweed
¼ c rice wine vinegar
1 T fresh lime juice
1 T yellow miso paste
1 T freshly grated ginger
1 t honey
1 T mirin
1 T dark sesame oil
1/3 c canola oil
Salt to taste
6 thinly sliced, Persian cucumbers or 1 large seedless cucumber
2 thinly sliced scallions
Directions
Soak seaweed in warm water to cover, 5 minutes. Drain, rinse briefly with cool water and drain again. Use a paper towel to blot excess water. Set seaweed aside.
In a medium bowl, whisk together the vinegar, lime juice, miso paste, ginger, honey, mirin, sesame and canola oil.
Add the wakame along with the cucumbers and scallions and toss well.
My very thoughtful husband gave me two very special gifts for Christmas last year. The first, tickets for the South Beach Food and Wine festival that we attended in February, the second, tickets to the Food and Wine Classic. Held over a mid June weekend in Aspen Colorado for 35 years, the Classic is the nation’s premiere culinary event.
The Classic brings together the world’s foremost authorities on wine and food at over 80 cooking demonstrations and wine seminars. In between the classes and seminars we had time to sample gourmet bites, wines and other libations in the large white tents that made up the grand tasting pavilion. One of our favorite places to stop was to taste the creative offerings of Food and Wine magazine’s “Best New Chefs”. For the past 28 years the best new chefs have showcased the next culinary superstars. At each Grand Tasting, two of the chefs offered up their best bites to a hungry crowd. While pressing through the line to receive their offerings, I made a point to congratulate each one on this significant accomplishment. The July issue of Food and Wine magazine concurrently features an article about the best new chefs and a recipe or two from each one. Occasionally I will try some of these recipes, this year several caught my attention.
Chef Brad Kilgore serves up his “playfully brilliant” dishes at his restaurant,Alterin Miami’s Wynwood neighborhood. Chef Kilgore stated in the article that squash and zucchini are not his favorites, so his goal was to make something great from them. His recipe for Summer Squash with Lemon Curd and Citron Vinaigrette, despite having many steps looked like something I could do and make use of produce from the garden.
Since it can be made three days ahead, my first step was to make the lemon curd. Lemon and lime curd tarts were a regular on the dessert buffets in my catering business. I admit I was a little dubious about lemon curd in a savory preparation. The addition of lemongrass and ginger made this curd unique and the lemon juice was courtesy of our Meyer lemon tree. There is a lemongrass plant in the garden but it was easier to use a few stalks from my supply in the freezer. They come back to room temperature fairly quickly and they are easier to slice when cold. The curd ingredients are put in the blender and blended until smooth. Strain the curd over a fine sieve and press down on the solids to extract as much flavor as possible from the ginger and lemongrass. Put a medium saucepan of water on to simmer and put the curd in a heatproof bowl that is large enough to sit on top of but not in the pan. The bowl shouldn’t be too big but large enough that you can comfortably whisk the curd without sloshing it on the counter top
Whisk constantly for about five minutes until it thickens, the curd should coat the back of a spoon. Remove the pan from the heat and whisk in the butter 1 tablespoon at a time and finish by adding the extra virgin olive oil. Cover the surface of the curd directly with plastic wrap, this will prevent the curd from forming a skin and refrigerate until cold about three hours.
The zucchini herb puree can also be prepared before the salad is assembled. Our source for yellow squash and several varieties of zucchini is from a company called Seeds of Italy. Every summer my intention is to pick them small before they get to the size of a baseball bat but there are always a few that get away from me. Just picked little zucchini actually have a delicate nutty flavor.
The original recipe called for the squash and zucchini to be seeded which is a good idea if you are buying medium to large sized squash. Since the seed pods in the zucchini and yellow squash that I picked were not fully developed yet I didn’t feel the need to remove the seeds. I picked basil, parsley and dill from the garden for the purée. Blanch the zucchini and squash and the herbs in boiling water for only 30 seconds. Blanching brightens the color of both the squash and the herbs. Immediately transfer them to an ice bath to stop the cooking. Drain them well. Pat the zucchini and squash dry with paper towels. Squeeze all the excess moisture out of the herbs. Set The yellow squash aside and purée the zucchini and the herbs in the blender. Add olive oil and salt to taste.
The vinaigrette is very simple, the acids, lemon juice and white wine vinegar are combined with chopped tarragon and honey, canola and extra virgin olive oil. I love the anisey flavor tarragon brings to any dish.
I read the recipe again to be certain I had all the components to plate it. Dill and tarragon sprigs, check. I added some red shiso leaves too. They grow like mad in the garden and seem to be a chef favorite. Thinly sliced chilies, were also a check. The last garnish had me initially stumped, puffed rice. Did they mean like the cereal? Probably not was my guess.
I found a slightly time consuming but easy way to make it. I cooked a cup of brown basmati rice until it was done, about 40 minutes and let it cool. I preheated my convection oven to 250°F, spread the rice out in a thin layer on a baking sheet and let it dry out for about an hour. I turned the oven off and let the rice dry out overnight. Line several baking sheets with paper towels. The next step is to heat about an inch of cooking oil in a wide pan , I used my wok for this. When the oil reaches 375°F add a kernel of rice, if it puffs up they are ready to go. Add the rice in batches, when it hits the hot oil the rice puffs up in seconds. You should be prepared with a fine mesh strainer to scoop out the puffed kernels before they get too brown. Puffed rice smells great, all toasty, it’s good as a salad garnish or just for munching.
With all components ready, I was ready to assemble the salad. Spread a thin layer of the zucchini herb purée on each plate. Dollop a little of the curd on the purée. Toss the yellow squash with some of the vinaigrette and season with salt. Arrange a few pieces of squash on the plates along with the marinated cheese. Garnish with herbs, chilies and puffed rice.
Joe declared the salad delicious and over the top, a unique combination of flavors and textures. On first glance this recipe looks very “cheffy” Lots of special steps and components, usually enough to scare the average home cook away. Obviously it’s not something you would whip up after work on a week night. But the steps are manageable, the curd, puree and vinaigrette can all be done ahead. It was a wonderful salad, beautiful, very unique, a wonderful combination of flavors and textures. Hmm, guess that’s why he’s a best new chef.
I was also interested to read that Chef Kilgore makes all of the desserts at his restaurant, that’s not typical of most head chefs. The lemon curd infused with lemongrass and ginger was very good. I have some left over from the salad and will serve it with some of our fresh blueberries that should be ready to harvest this weekend. The zucchini herb puree I had leftover made a good sauce for salmon and would work for poached chicken too. I’m certain I will be making it again this summer. The puffed rice was a bit of a revelation and fun to do. It makes an interesting addition to a salad and just for munching too.
Summer Squash Salad with Lemon Curd and Citron Vinaigrette
Serves four
Ingredients for the lemon curd
1/3 c fresh lemon juice
3 large eggs
2½ T sugar
1 T thinly sliced lemongrass, tender inner bulb only
2 t minced peeled fresh ginger
4 T unsalted butter, cut into tablespoons and at room temperature
½ T extra virgin olive oil
Directions for the lemon curd
In a blender, combine lemon juice, eggs, sugar, lemongrass and ginger and blend until smooth. Strain the mixture through a fine sieve into a medium heatproof bowl, pressing on the solids.
Place the bowl over, not in, a saucepan of barely simmering water. Cook the curd, whisking constantly until the curd is thick enough to coat the back of a spoon, 5-7 minutes.
Remove the bowl from the heat and whisk the butter in until incorporated, then whisk in the olive oil. Press a sheet of plastic wrap on the surface of the curd and refrigerate until cold.
Ingredients for the zucchini-herb purée
8 oz yellow squash, quartered lengthwise, seeded if necessary and cut into 3″ pieces
5 oz zucchini, quartered lengthwise, seeded if necessary and cut into 3″ pieces
½ c each, basil, parsley and dill
2 T extra virgin olive oil
Kosher salt
Directions for the zucchini herb purée
In a medium saucepan of salted boiling water, blanch the squash and zucchini for 30 seconds; using a slotted spoon, transfer to an ice bath to cool completely. Blanch the herbs until wilted, about 30 seconds. Drain and transfer to an ice bath to cool. Drain the squash, zucchini and herbs; pat the squash and zucchini dry and squeeze excess water out of the herbs.
Reserve the yellow squash in a small bowl. In a blender, purée the zucchini with the herbs and a half a cup of water until smooth. With the machine on, add the half cup of olive oil. Season to taste with salt.
Ingredients for the vinaigrette
2 T fresh lemon juice
2 t white wine vinegar
1 T chopped tarragon
¼ t honey
¼ c canola or grapeseed oil
2 T extra-virgin olive oil
Kosher salt
Directions for the vinaigrette
In a small bowl combine the lemon juice, vinegar, tarragon and honey. Gradually whisk in both of the oils until emulsified. Season the vinaigrette with salt.
Final assembly of the salad
4 oz marinated sheep or goat’s milk cheese, cut into small chunks for serving
Small tarragon, dill, shiso, or other herb sprigs
Thinly sliced chilies
Puffed rice
Spread a thin layer of the zucchini purée on 4 small plates. Dollop a few small teaspoons of the lemon curd on the puree. Toss the squash with 2 tablespoons of the vinaigrette and season with salt. Reserve remaining vinaigrette for another use. Arrange three pieces of squash on each plate along with some of the marinated cheese. Garnish the salads with the herb sprigs, chilies and puffed rice.
He’s back, Christopher Kimball that is. The bespectacled and bow tied co founder of America’s Test Kitchen and editor in chief of Cooks Illustrated, Kimball left both posts last November over a contract disagreement.
Accepting no advertising, Cooks Illustrated has been the authority for developing well tested, (sometimes over 100 times!) absolute best recipes for everything imaginable for almost 25 years. I have been a huge fan of Cooks Illustrated from day one and have saved every issue. Although I use recipes from many sources I always return to CI for its foolproof results. Fortunately for his devoted followers, Mr Kimball is back on the culinary scene with his new project, Milk Street Kitchen. Named for the street in Boston where the company is located, Milk Street will house offices for a new magazine and other media content, a retail cooking school and a studio where a new PBS show will be filmed.
I received the first email newsletter from Milk Street Kitchen this past week. This recipe from the newsletter, Thai Coleslaw, looked like a perfect fit for what I have been harvesting from the garden this week. I made some changes to the slaw ingredients. I substituted kohlrabi for the napa cabbage, carrots for the radishes and since our first crop of cilantro has died off, lime basil. The last of the snow peas make an appearance in this slaw as well.
What gives the slaw a Thai flair is the dressing. It combines lime juice, sugar, a serrano chili and coconut milk. To get the most juice from a fresh lime, microwave it for a few seconds to get the juices flowing. After I cut the fruit in half I score the sections to further loosen things up a bit. One average sized lime gave me a little more than the 3 tablespoons I needed.
Coconut milk has been a staple in my pantry since we discovered our love for Thai food over thirty years ago. Look for canned coconut milk found in the Asian section of your supermarket. This is not to be confused with the dairy-free milk substitute or cream of coconut, an ingredient in piña coladas. There are many brands on the market these days, my favorite is still Chaokoh. With all canned coconut milk, shake the can well before opening since the fat and the liquid separate. Fish sauce is another ingredient that gives this dish a southeast Asian touch. It is extracted from the fermentation of fish, usually anchovies, that are salted. The amber colored liquid give a unique depth of flavor to many dishes, including this slaw. A serrano pepper, seeded and minced, gives the right amount of heat to the dressing.
Kohlrabi gets it’s name from a German word, kohl-cabbage (as in coleslaw) and rabe-turnip. It has a milder flavor than either of those vegetables, the best description I read was that it tastes like broccoli stems. Kohlrabi is not a root vegetable since the bulbous part grows above the ground and is studded and topped with leaves that resemble those on a broccoli plant. The vegetable “minion” was a good substitute for the crisp and crunchy napa cabbage. Shredded carrots and julienned snow peas (last of the season) added more color and crunch. The radishes originally called for in the salad won’t be back until the fall garden.
With the exception of the coconut milk, combine the dressing ingredients in a liquid measuring cup, let sit for ten minutes. The fresh serrano is cooked in the lime juice and mellows out it’s flavor. Stir in the coconut milk. Combine the kohlrabi, carrots, snow peas and herbs in a large bowl. Pour the dressing over and toss until well combined. Stir in the cashews and serve. It’s a delicious alternative with pork barbecue.
Thai Coleslaw
Serves 4-6
Ingredients
3 tablespoons lime juice
4 teaspoons sugar
1 tablespoon fish sauce
1 medium serrano chili, seeded and minced
5 tablespoons coconut milk
8 cups shredded kohlrabi or napa cabbage
2 cups shredded carrots
4 ounces sugar snap peas, strings removed and thinly sliced
½ cup chopped basil (I used lime) or cilantro
¼ cup coarsely chopped fresh mint
½ cup roasted, salted cashews, coarsely chopped
Directions
In a liquid measuring cup, combine the lime juice, sugar, fish sauce and chili. Let sit for 10 minutes. Whisk in the coconut milk until combined.
In a large bowl, combine the kohlrabi, carrots, peas, basil or cilantro and mint. Add the dressing and toss until evenly coated. Stir in the cashews and serve.
The vegetable garden, now that summer is fast approaching, is about creating recipes for fruit and vegetables that are harvested at the same time. That was the inspiration for this spinach, snow pea, strawberry, and radish salad.
It was time to make one last spinach salad before the plants go to seed. I snipped the smallest leaves off the bolting plants before pulling them out. Joe will plant spinach again in the fall when the cooler temperatures return.
I pick about a quart of snow peas each day. Their season is short and the warm temperatures of last week were less than ideal for them. This week promises to be coolerand as usual they will be with us until the end of June.
Since they grow quickly, Joe does consecutive plantings of radishes so they aren’t all ready to harvest at once. A new crop emerges in about 3 weeks. They are another vegetable that prefers cool weather, summer heat renders them woody and hot. I picked small radishes, thinning out a row, allowing the ones left behind a few more days to mature.
Our strawberry patch is in it’s third season now and is doing better than ever. I spent some time cleaning out the weeds this past weekend that seem to take over if given the opportunity. Fresh strawberries are delicious. We even get a second crop at the end of summer.
A strawberry vinaigrette is the perfect complement to this salad. For the dressing I combined garlic, Dijon mustard, strawberry balsamic vinegar, a touch of honey and extra-virgin olive oil.
When making of salad be sure to use a bowl that gives you plenty of room to combine the ingredients. Start by tossing the spinach lightly with dressing to coat and then add some strawberries, peas and radishes and toss again. I leave the rest of them to top the salad. That way you can be certain that the last person served doesn’t get all the heavier ingredients that sink to the bottom of the bowl.
Spinach, Strawberry, Snow Pea and Radish Salad
Serves two
Ingredients
For the vinaigrette
1 small clove garlic, minced
3 T balsamic vinegar (strawberry works nicely here)
½-1 t honey
1 t Dijon mustard
½ c extra virgin olive oil
Salt and freshly ground pepper
For the salad
6 c baby spinach
1 c strawberries, hulled, halved and sliced
1 c snow peas, strings removed
3-4 medium radishes, sliced thin
¼ c toasted sunflower seeds
Directions
In a small bowl, combine the vinegar, mustard, and garlic. Add the oil in a slow steady stream, whisking constantly. Season with salt and pepper to taste.
Add the snow peas to a small pot of boiling water, count to ten, remove from heat and drain well in a colander. Pat dry and let cool.
Place the spinach in a large bowl and toss with some of the vinaigrette and taste. Add about half of the other ingredients, toss again, adding more of the dressing if necessary. Top individual salads with the remaining ingredients. Season each portion to taste with freshly ground black pepper. Reserve remaining vinaigrette for a later use.
